Podczas XX Międzynarodowego Sympozjum KUPS (17-19 maja) Mathias H. Ebert zdumiewał się dwoma faktami: tym, że w Polsce ponad połowa zbieranych jabłek co roku trafia do zakładów przetwórczych, oraz tym, że nie jest u nas znany model intensywnego sadu przemysłowego. Pokusił się o przedstawienie swoich wyliczeń dowodzących opłacalności prowadzenia jabłoniowych sadów zakładanych specjalnie i wyłącznie pod potrzeby przemysłu.
Zdaniem M. Eberta Polska jest jedynym krajem, w którym tak wysoki (ponad 50%) odsetek jabłek trafia do przemysłu. W krajach UE średnio przeznacza się do tego celu 14% jabłek. Z jego analizy wynika, że przy polskiej produkcji prawie 4 mln ton jabłek około 0,3 mln ton trafiających pod prasę owoców pochodzi z sadów przydomowych, amatorskich, „dzikich”. Z sadów towarowych, nastawionych na produkcję owoców deserowych jedzie do przetwórni 1,1 mln ton – tych nie kwalifikujących się do obrotu na rynku. Ponieważ potrzeby przemysłu oscylują aktualnie wokół 2 mln ton (a możliwości sięgają 3,2 mln t), pozostałe 590 tys. ton też pochodzi z tych samych sadów towarowych.
To pierwszy problem, nad którym M. Ebert proponuje nam się zastanowić. Te pół miliona ton jest produkowane drogo – technologią „jabłka deserowego”, zaś przychody z tej produkcji są na poziomie jabłka przemysłowego. Warto byłoby to zmienić poświęcając na ten cel około 15,5 tys. ha ziemi (ze 176 tys. ha zajętych pod jabłonie).
Zdając sobie sprawę z kontrowersyjności swej tezy wykładowca stwierdził, że jest możliwość osiągania w długoletniej perspektywie rentowności z sadów założonych pod potrzeby przemysłu. Punktem wyjścia było dla niego wyliczenie średniej ceny takiego jabłka w Polsce za ostatnie 10 lat. Jest to 0, 435 zł/kg. Następnie przedstawił ideę sadu, który pozwoliłby na produkcję poniżej tej granicy.
Pierwszym warunkiem uzyskania rentowności produkcji przy przychodzie w granicach 0,43 zł/kg jest efekt skali – sad przemysłowy musi mieć powyżej 10 hektarów, a jeszcze lepiej kilkadziesiąt (grupa producencka?). Należy go założyć z myślą o mechanicznym zbiorze owoców i wyeliminowaniu pracy najemnej – jako najbardziej kosztotwórczych pozycji. To jest realne – potrzebne są jednak drzewa na silnie rosnących podkładkach (np. M25, M11), których nasze szkółki raczej nie oferują. Również odmiany muszą odpowiadać klientowi – tu jest do wyboru kilkanaście co najmniej (w tym niemieckie z grupy „Re”, czy czeskie). Posadzić je można (bez drogich podpór) w rozstawie 5,5×2 m (800-1100 szt/ha). Kolejną oszczędność da ograniczenie koniecznej ochrony chemicznej – proponowane odmiany są w różnym stopniu odporne na choroby czy przynajmniej tolerancyjne wobec patogenów. Sad można założyć nawet z jednej odmiany, uzyskując koncentrację owocowania i skrócenie zbiorów – przechowywania nie ma, jabłka jadą prosto pod prasy. Alternatywa jest rozłożenie zbiorów na dłużej z wykorzystaniem różnych pór dojrzewania odmian.
Przy osiągnięciu plonów w wysokości 45 t/ha rentowność sadu wynosi 11%, przy 50 tonach – 18%, przy 55 tonach – 23%. Sady posadzone według zarysowanego wyżej schematu są znane sadownikom europejskim (np. w Austrii). Zdaniem Mathiasa Eberta przy ich wprowadzaniu wszyscy są wygrani: sadownik – bo ma wieloletnią rentowną inwestycję nie wymagającą ostrego reżimu prac, przemysł – bo ma bazę surowcową z pewnymi dostawami określonych odmian jabłek.
